(serves 4)
1 chicken
50 ml olive oil
white wine
50g tomato paste
200g veal stock or water
Vegetable garnish in Basque style
1 red bell pepper
1 green bell pepper
2 leeks
1 onion
2 tomatoes

For the garnish in basque style:
1. Cut the onion, leeks and peeled bell peppers into thin slices.
2. Heat the olive oil in a pan, sweat them for 3 minutes.
3. Add the garlic and peeled, seeded tomatoes.
4. Cook them until the juice is thick.

For the chicken
1. Cut the chicken into eight pieces.
2. Season with salt and pepper.
3. Heat the vegetable oil in a large pan and squte the chicken pieces.
4. Place the pan in the owen over high heat and cook for 20 minutes.
5. Remove the chicken from the pan and degrease.
6. Add white wine and tomato paste in thn pan and sweat for 1 minute.
7. Add the chicken and simmer for 5 minutes.
8. Add the Basque gamish.
9. Remove the chicken and wrap them in smoked ham.
10. Place the chicken in the pas over the basque gamish and simmer for 5 minutes.
11. Before serving, splinkle chopped parsley.

Remark : You can serve with fragrant rice and chorizo sausage in the size of matchstick strips.
